  • 2 tablespoons vegetable oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 cup bell peppers (any color), thinly sliced
  • 1 cup carrots, julienned or thinly sliced
  • 1 cup snap peas or snow peas
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce (or hoisin sauce for a sweeter option)
  • 1 tablespoon dark soy sauce (for color and depth, optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening, optional)
  • 1 teaspoon sesame oil (for flavor)
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Cook the Noodles:
    • Bring a large pot of salted water to a boil. Cook the lo mein or egg noodles according to the package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken:
    • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the thinly sliced chicken and stir-fry until cooked through and lightly browned, about 4-5 minutes. Remove the chicken from the skillet and set aside.
  3. Stir-Fry the Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the sliced onion and cook for about 2 minutes until it starts to soften. Add the garlic and ginger and cook for another 30 seconds, until fragrant.

    • Add the cooked noodles to the skillet and toss everything together until the noodles are evenly coated with the sauce and heated through. Drizzle with sesame oil and stir to combine.
