Creamy Potato & Hamburger Soup

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups diced potatoes (about 4 medium potatoes)
  • 4 cups beef broth
  • 1 cup milk or heavy cream
  • 1 cup frozen corn kernels
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Brown the Ground Beef:
    • In a large soup pot or Dutch oven, brown the ground beef over medium-high heat until fully cooked. Break it up with a spoon as it cooks.
    • Drain any excess fat from the pot.
  2. Cook the Aromatics:
    • Add diced onion to the pot with the cooked ground beef. Sauté for 3-4 minutes until the onion is translucent.
