Ingredients:

  • 1 box (12 oz) jumbo pasta shells
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 package (10 oz) frozen chopped spinach, thawed and drained
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Cook the Pasta Shells:
    • Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.
  2. Prepare the Filling:
    • Preheat your oven to 350°F (175°C).
    • In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
    • Stir in thawed and drained spinach, cooking for 2-3 minutes until heated through. Remove from heat and let cool slightly.
    • In a mixing bowl, combine ricotta cheese, 3/4 cup shredded mozzarella cheese, 1/4 cup grated Parmesan cheese, egg, dried oregano, dried basil, salt, and pepper. Add the spinach mixture and mix until well combined.
  3. Assemble the Stuffed Shells:
    • Spread 1 cup of marinara sauce evenly on the bottom of a 9×13-inch baking dish.
    • Stuff each cooked shell with a generous spoonful of the ricotta-spinach mixture and place them in the baking dish.
  4. Bake the Stuffed Shells:
    • Pour the remaining marinara sauce over the stuffed shells, covering them evenly.
    • Sprinkle the remaining shredded mozzarella and grated Parmesan cheese over the top.
    • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  5. Serve:
    • Remove from the oven and let the stuffed shells cool slightly before serving.
    • Garnish with fresh basil leaves if desired, and serve warm.
