Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese (optional)
  • Cooked pasta or crusty bread, for serving

Instructions:

  1. Prepare the Shrimp:
    • Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Cook the Garlic:
    • In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1-2 minutes, until fragrant and lightly golden.
  3. Add the Shrimp:
    • Add the shrimp to the skillet in a single layer. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. Make the Sauce:
    • Pour the white wine (or chicken broth) into the skillet, scraping up any browned bits from the bottom of the pan. Let it simmer for about 2-3 minutes until the liquid reduces slightly.
    • Stir in the Italian seasoning, crushed red pepper flakes (if using), and lemon juice. Cook for another 1-2 minutes to let the flavors meld.
  5. Combine and Serve:
    • Return the cooked shrimp to the skillet and toss to coat in the sauce. Cook for another minute until the shrimp are heated through.
    • Remove the skillet from heat and stir in the chopped parsley.
  6. Serve:
    • Serve the shrimp scampi over cooked pasta or with crusty bread to soak up the delicious sauce. Sprinkle with grated Parmesan cheese if desired.
