HOMEMADE BEEF STROGANOFF

Ingredients:

  • 1 lb beef sirloin or tenderloin, thinly sliced into strips
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped fresh parsley, for garnish (optional)
  • Cooked egg noodles, for serving

Instructions:

  1. Prepare the Beef:
    • Season the beef strips with salt and pepper to taste.
    • In a large skillet or frying pan, heat olive oil over medium-high heat. Add the beef strips and cook until browned on all sides, about 2-3 minutes. Remove the beef from the skillet and set aside.
  2. Cook the Mushrooms and Onions:
    • In the same skillet, add sliced onions and mushrooms. Sauté until onions are translucent and mushrooms are tender, about 5-6 minutes.
    • Add minced garlic and cook for an additional minute until fragrant.
  3. Make the Sauce:
    • Sprinkle flour over the mushroom and onion mixture, stirring to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.
    • Gradually stir in beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet.
    • Bring the mixture to a simmer and cook until the sauce thickens slightly, about 5 minutes.
  4. Finish the Stroganoff:
    • Reduce heat to low. Stir in sour cream and Dijon mustard until well combined and heated through.
    • Return the cooked beef strips to the skillet, stirring gently to coat with the sauce. Simmer for 2-3 minutes to heat the beef through.
  5. Serve:
