Ingredients:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste
  • 12 oz pasta (penne, fettuccine, or your favorite)
  • Fresh basil, chopped (optional, for garnish)

Instructions:

  1. Cook Pasta:
    • Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Cook Chicken:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the chicken pieces and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté Vegetables:
    • In the same skillet, add the diced onion and cook until softened, about 3 minutes.
    • Add the minced garlic and cook for another 1 minute.
    • Add the sliced red and yellow bell peppers and cook until tender, about 5 minutes.
  4. Prepare Sauce:
    • Stir in the drained diced tomatoes and cook for another 2 minutes.
    • Pour in the heavy cream and bring to a simmer.
    • Add the grated Parmesan cheese and dried Italian seasoning. Stir until the sauce is smooth and creamy.
  5. Combine and Serve:
    • Add the cooked chicken back to the skillet and stir to combine.
    • Add the cooked pasta to the skillet and toss until everything is well coated with the sauce.
    • Season with additional salt and pepper, to taste.
  6. Garnish and Serve:
    • Garnish with fresh chopped basil if desired.
