Ingredients:

  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup crumbled Cotija cheese (or feta cheese)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup lime juice (about 2 limes)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 jalapeño, seeded and finely chopped (optional, for heat)
  • Tortilla chips, for serving

Instructions:

  1. Prepare the Corn:
    • If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw and drain. If using canned corn, drain well.
    • In a large skillet over medium-high heat, cook the corn for 5-7 minutes, stirring occasionally, until it’s slightly charred. Remove from heat and let cool slightly.
