Peach Pretzel Jello Salad

Ingredients:

For the Crust:

  • 2 cups pretzel sticks or crushed pretzels
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup granulated sugar

For the Filling:

  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (like Cool Whip)

For the Jello Layer:

  • 1 package (6 oz) peach Jello
  • 2 cups boiling water
  • 1 can (15 oz) peach slices, drained (reserve 1/2 cup of juice)
  • 1 cup cold water

Instructions:

  1. Prepare the Pretzel Crust:
  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the crushed pretzels, melted butter, and granulated sugar. Mix until the pretzels are well coated.
  • Press the pretzel mixture evenly into the bottom of a 9×13-inch baking dish.
  • Bake for 10 minutes, then remove from the oven and let cool completely.
  1. Make the Cream Cheese Layer:
  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and continue to beat until well combined.
  • Fold in the whipped topping until the mixture is smooth and well combined.
  • Spread the cream cheese mixture evenly over the cooled pretzel crust. Refrigerate while you prepare the Jello layer.
  1. Prepare the Jello Layer:
  • In a large bowl, dissolve the peach Jello in 2 cups of boiling water. Stir until fully dissolved.
  • Add 1 cup of cold water and stir.
  • Gently fold in the drained peach slices and reserved peach juice.
  • Allow the Jello mixture to cool slightly before pouring it over the cream cheese layer.
  1. Assemble and Chill:
  • Carefully pour the Jello mixture over the cream cheese layer, spreading it evenly.
  • Refrigerate the entire dish for at least 4 hours or until the Jello is set.
  1. Serve:
  • Once set, cut into squares and serve chilled.

Tips:

  • Pretzel Crust: Make sure the pretzel crust is completely cooled before adding the cream cheese layer to prevent melting.
  • Jello Layer: Let the Jello cool to room temperature before pouring it over the cream cheese layer to prevent mixing.
  • Toppings: If desired, you can garnish with additional whipped topping or fresh peach slices before serving.
