Poor Man’s Husband Casserole

Delight in the simplicity and heartiness of Poor Man’s Husband Casserole, a classic recipe featuring layers of ground beef, creamy sour cream, tender egg noodles, and gooey cheese. This casserole is easy to make, economical, and sure to become a family favorite.

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 8 oz egg noodles, cooked according to package instructions
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Preheat Oven and Prepare Ingredients:
    • Preheat your oven to 350°F (175°C).
    • Cook egg noodles according to package instructions until al dente. Drain and set aside.
  2. Cook the Ground Beef:
    • In a large skillet, brown the ground beef over medium-high heat until fully cooked. Break up the beef into crumbles as it cooks.
    • Drain any excess fat from the skillet.
  3. Prepare the Casserole:
    • Add chopped onion and minced garlic to the skillet with the cooked ground beef. Sauté for 3-4 minutes until the onion is translucent and garlic is fragrant.
  4. Combine Ingredients:
    • Stir in condensed cream of mushroom soup and sour cream until well combined.
    • Add 1 cup of shredded cheddar cheese and mix until melted and incorporated.
    • Season with salt and pepper to taste.
  5. Assemble and Bake:
    • In a greased 9×13-inch baking dish, layer half of the cooked egg noodles.
    • Spread half of the ground beef mixture evenly over the noodles.
    • Repeat with another layer of noodles and remaining ground beef mixture.
    • Sprinkle the remaining shredded cheddar cheese evenly over the top.
  6. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted and bubbly.
  7. Serve:
    • Remove from the oven and let it cool slightly.
    • Garnish with chopped fresh parsley if desired.
