Rhubarb Cake with Butter Sauce

Ingredients:

  • 2 cups diced rhubarb
  • 1 1/2 cups granulated sugar, divided
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the Butter Sauce:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Rhubarb:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
    • In a small bowl, toss diced rhubarb with 1/2 cup granulated sugar. Set aside while preparing the cake batter.
  2. Make the Cake Batter:
    • In a large mixing bowl, cream together softened butter and remaining 1 cup granulated sugar until light and fluffy.
    • Beat in egg and vanilla extract until well combined.
    • Gradually add buttermilk, alternating with flour mixture, beginning and ending with flour.
    • Stir in baking soda and salt until smooth.
  3. Assemble the Cake:
    • Spread half of the cake batter into the prepared baking dish.
    • Sprinkle the sugared rhubarb evenly over the batter.
    • Spoon the remaining batter over the rhubarb, spreading it gently to cover.
  4. Bake the Cake:
    • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  5. Make the Butter Sauce:
    • While the cake is baking, prepare the butter sauce. In a small saucepan, melt butter over medium heat.
    • Stir in granulated sugar and heavy cream. Bring to a simmer, stirring constantly, until sugar is dissolved and sauce has thickened slightly.
    • Remove from heat and stir in vanilla extract.
