Savory One-Pan Stuffed Pepper Casserole

Here’s a delicious recipe for a Savory One-Pan Stuffed Pepper Casserole

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bell peppers, diced (any color)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup long-grain white rice
  • 2 cups beef broth (or chicken broth)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Cook Ground Beef:
    • In a large oven-safe skillet or pan, cook the ground beef over medium-high heat until browned and cooked through. Drain any excess fat.
  2. Saute Aromatics:
    • Add chopped onion and minced garlic to the skillet with the cooked beef. Saute until onions are translucent, about 3-4 minutes.
  3. Add Peppers and Tomatoes:
    • Stir in diced bell peppers and drained diced tomatoes. Cook for another 3-4 minutes, until peppers start to soften.
  4. Add Rice and Broth:
    • Add the white rice, beef broth, dried oregano, dried basil, salt, and pepper to the skillet. Stir well to combine.
  5. Simmer:
    • Bring the mixture to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  6. Melt Cheese:
    • Preheat your oven’s broiler on high.
    • Remove the skillet from heat. Sprinkle shredded cheddar cheese evenly over the top of the casserole.
  7. Broil:
    • Place the skillet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  8. Serve:
    • Garnish with chopped fresh parsley if desired.
    • Serve the Savory One-Pan Stuffed Pepper Casserole hot directly from the skillet.
