Ingredients:

  • Cake:
    • 1 cup all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 5 large eggs, separated
    • 1 cup granulated sugar, divided
    • 1/3 cup whole milk
    • 1 teaspoon vanilla extract
  • Tres Leches Mixture:
    • 1 can (14 oz) sweetened condensed milk
    • 1 can (12 oz) evaporated milk
    • 1 cup heavy cream
    • 1 teaspoon vanilla extract
  • Topping:
    • 2 cups whipped cream
    • 1/2 cup powdered sugar
    • Fresh strawberries, sliced, for garnish

Instructions:

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large bowl, beat the egg yolks with 3/4 cup of granulated sugar until pale and fluffy. Stir in the milk and vanilla extract.
    • Gradually fold in the flour mixture until just combined.
    • In a separate bowl using clean beaters, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup of granulated sugar and beat until stiff peaks form.
    • Gently fold the beaten egg whites into the batter until fully incorporated.
    • Pour the batter into the prepared baking dish and spread evenly.
  2. Bake the Cake:
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Remove from the oven and let the cake cool completely in the pan.
  3. Prepare the Tres Leches Mixture:
    • In a large bowl, whisk together the sweetened condensed milk, evaporated milk, heavy cream, and vanilla extract.
  4. Soak the Cake:
    • Once the cake has cooled, pierce the surface all over with a fork.
    • Slowly pour the tres leches mixture over the cake, making sure to evenly distribute it. Let the cake absorb the mixture for at least 30 minutes, or refrigerate overnight for best results.
  5. Top and Serve:
    • In a chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form.
    • Spread the whipped cream over the soaked cake.
    • Garnish with fresh sliced strawberries.
  6. Chill and Serve:
    • Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld.
    • Slice and serve chilled, enjoying the creamy and strawberry-infused goodness!
