Sweet and Sour Chicken

Ingredients:

For the Chicken:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 large eggs, beaten
  • 1/4 cup vegetable oil

For the Sauce:

  • 1/2 cup sugar
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Add-ins:

  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 cup pineapple chunks

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 325°F (165°C).
  2. Prepare the Chicken:
    • Place the cornstarch in a shallow dish and the beaten eggs in another shallow dish.
    • Dredge each piece of chicken first in the cornstarch, then dip in the beaten eggs, making sure to coat well.
  3. Fry the Chicken:
    • Heat the vegetable oil in a large skillet over medium-high heat.
    • Add the chicken pieces in batches, frying until golden brown on all sides. They do not need to be fully cooked at this point, just crispy. Remove and drain on paper towels.
  4. Make the Sauce:
    • In a medium bowl, whisk together the sugar, ketchup, rice vinegar, soy sauce, garlic powder, ginger powder, salt, and black pepper.
  5. Combine and Bake:
    • Place the fried chicken pieces in a 9×13 inch baking dish. If using, add the bell peppers and pineapple chunks.
    • Pour the sauce evenly over the chicken and vegetables, tossing gently to coat.
  6. Bake:
    • Bake in the preheated oven for 45-60 minutes, stirring every 15 minutes to ensure the chicken is well-coated with the sauce and cooked through.
  7. Serve:
    • Serve the Sweet and Sour Chicken hot over a bed of rice.
