Tender Chicken Delight

Here’s a recipe for Tender Chicken Delight:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Chicken:
    • Season chicken breasts with salt and pepper on both sides.
    • In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
  2. Make the Sauce:
    • In the same skillet, add chopped onion and cook until softened, about 3-4 minutes.
    • Add minced garlic and cook for 1 minute until fragrant.
    • Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
    • Stir in heavy cream, Dijon mustard, and thyme leaves. Simmer for 2-3 minutes until the sauce thickens slightly.
  3. Finish the Dish:
    • Reduce heat to low. Stir in grated Parmesan cheese until melted and smooth.
    • Return chicken breasts to the skillet, spooning some of the sauce over the chicken.
    • Simmer for another 2-3 minutes to heat the chicken through and allow it to absorb the flavors of the sauce.
  4. Serve:
    • Garnish with chopped fresh parsley, if desired.
    • Serve the Tender Chicken Delight hot, with additional sauce spooned over each chicken breast.
